One 12 oz. box soft silken tofu
One 12 oz. bag dark chocolate chips, or equivalent chocolate bars, squares, etc. The better the chocolate, the better the mousse!
One teaspoon pure vanilla extract
Spoon into individual serving cups (shot glasses, mini-cupcake papers, little ramekins, teacups - whatever!). Cover and refrigerate until firm. Keeps for at least a week!
Great served with fresh raspberries or strawberries.
You can easily half or even quarter the recipe and use the rest of the tofu for something else.
