1 whole small cauliflower head 1 medium sweet onion 2 stalks celery 4 cups chicken broth 1 cup 1% milk 1 cup grated swiss cheese salt & pepper 1 tbsp dry dill weed
Break cauliflower into florets. Chop onion, Chop celery. Place in 3qt saucepan along with chicken broth, cover and bring to a boil. Simmer until veggies are soft. Puree mixture in blender. You may have to do this in batches. Return to saucepan and add milk, swiss cheese and seasonings. Over low heat stir until cheese is melted.
