Black Bean Stew

Number of Servings: 2

Ingredients

    1 15.5 oz can black beans, rinsed
    1 15.5 oz can diced tomatoes in tomato juice
    1/4 C cooked brown rice
    1/4 C frozen yellow corn
    1 small red onion coarsely diced
    1 large clove garlic coarsely chopped
    1/4 C coarsely chopped fresh basil

Directions

Combine all ingredients in a medium non-stick saucepan. Heat to boiling and reduce heat simmering for 15 minutes more or until onion and garlic are tender.

Serves two
