2 jalapeno peppers
1/2 cup fat free yogurt
4 TBS fat free sour cream
1/2 cup finely shredded cheese
Seasonings to taste
Place half of the potato slices in a large shallow baking dish. Spread each potato slice with some of the yogurt sauce and then place a slice of onion and a slice of pepper on each. Sprinkle with a little of the shredded cheese. Top each slice with the remaining potato slices. Top with any remaining sauce and cheese. Bake in oven or microwave just long enough to heat ingredients and melt cheese.
