2 lb Beef chuck, cut into stew meat pieces
1 C. Unsweetened Pomegranate Juice
2 C. chopped Onions
5 clove Garlic, minced
2 tbsp Maple Syrup
1 14.5 oz. can fire roasted diced tomatoes
1 tsp Cinnamon, ground
25 cup packed Raisins
.25 C. balsamic vinegar
2 tsp Rosemary, dried or 1 sprig fresh
2 tsp Marjoram, dried
1 tbsp Basil, dried
2 bay leaves
2 tsp Thyme, ground
Brown off beef in a skillet on high heat just to sear the outside. Add beef to the crock pot and stir.
In a medium bowl combine all other ingredients. Pour over beef and stir. Cover and cook High 4 hours, or Low 6-8 hours. Serve over mashed potatoes.
