Introduction

Found this recipe a few years ago through Dr. Phil. Usually keep the base of turkey, tomatoes, and black beans but tweak the other stuff based on my mood. I also usually serve with a side of homemade cornbread. Found this recipe a few years ago through Dr. Phil. Usually keep the base of turkey, tomatoes, and black beans but tweak the other stuff based on my mood. I also usually serve with a side of homemade cornbread.

Ingredients

    1 package of lean ground turkey
    2 Tbsp of chili powder
    1 Tbsp of paprika
    1/2 chopped yellow onion
    3 cloves smashed garlic
    1 can of black beans
    1 can of stewed tomatoes- mexican style
    2 Tbsp of salsa
    1/2 package of frozen corn
    dollop of fat free sour cream

Directions

Brown the turkey with the chili powder and paprika (empty any excess grease w/ a spoon so you don't lose the flavoring) using medium heat. Once turkey is 3/4 browned add the smashed garlic cloves and chopped onions, cook until onions are golden. Add the cans of stewed tomatoes and black beans and salsa. Stir and let simmer for a few minutes. Next add the frozen corn and any other veggies you would like. Simmer for at least five minutes, stirring every few minutes.

Serve w/ a dollop of the sour cream and a small corn muffin.

Variations: Add jalapenos, bell peppers, fresh tomoatoes, etc.
