4 Duck legs with skin
2 Medium Onions, raw and sliced
2 Medium Carrots, raw and sliced
Tin Tomatoes with Basil, Oregano & Garlic
1 tsp Rosemary, dried
1 cup (8fl oz) Water
In the skillet gently sautÃ© the Onions and Carrots until just brown add to the slow cooker. Add the tinned Tomatoes, water and dried Rosemary.
Put a lid on the slow cooker and cook on high for 4 hours. Remove duck legs and remove all the meat, serve with fresh vegetables and boiled potatoes or rice.

I found the duck needed to be in there a lot longer then 4 hours to become really nice and tender. I had planned to have it for lunch but we ended up eating it for dinner. i changed the carrots for runner beans out of my garden. The duck too was ours, we keep the females and eat the males. lovely. - 10/3/10
