Introduction

This is the recipe for the cabbage soup diet from the Cabbage Soup Diet book. The soup is bland but you can add various spices or herbs to enhance the flavor. Fresh basil or cilantro taste great. Ingredients

    Cabbage, fresh, 1 head, large (about 7" dia)
    Carrots, raw, 6 large (7-1/4" to 8-1/2" long)
    Onions, raw, 6 medium (2-1/2" dia)
    Scallions, raw, 6 medium (4-1/8" long)
    *Peppers, sweet, red, fresh, 2 medium (approx 2-3/4" long, 2-1/2"
    Red Ripe Tomatoes, 3 large whole (3" dia)
    Celery, raw, 5 stalk, large (11"-12" long)
    Garlic, 2 cloves
    *Brown Rice, long grain, 1.5 cup

Directions

Place the chopped vegetables in large pot and cover with 6 quarts of cold water. Bring to a boil. Boil for 10 minutes. Add rice and cook for 20 more minutes or until vegetables are desired doneness.
