Number of Servings: 40

Ingredients

    2 onions, diced
    2 big carrots, diced
    1 zucchini, diced
    1 eggplant, diced
    1 green pepper, diced
    4 tsp olive oil
    4 pounds lean ground beef (or veal, or pork)
    3x48 oz tomato juice
    2x28 oz canned crushed tomatoes
    1x28 oz canned diced tomatoes
    2x6 oz tomato paste
    1tbsp crushed red pepper spice
    1 tsp oregano
    2 tsp italian seasoning
    1 tbsp parsley
    1/4 cup sugar
    1 cup mushrooms, diced

Directions

Put all the diced vegetables (except mushrooms) in a big thick pot with the oil on a high stove top
After 3-4 minutes, add the meat. Stirr until the meat is brown.
Add all the other ingredients.
Bring to a boil
Cook for about 3-4 hours
It should make about 40 servings of 1 cup.
