Broccoli Cheese Soup

Introduction

Number of Servings: 12

Ingredients

    2 Tbsp. onion, finely minced
    2 Tbsp. butter
    3 Tbsp. flour
    1/2 tsp. salt
    1/2 tsp. pepper
    1/2 tsp. garlic powder
    2 cups milk
    1/2 brick processed cheese, cubed
    1 1/2 cups boiling water
    2 chicken bouillon cubes
    1 10-oz. package frozen chopped broccoli (or 2 1/2 cups fresh diced broccoli)

Directions

In a 4-quart saucepan, saute onions in butter until tender. Add flour and spices; add milk; bring to a boil, stirring constantly until mixture thickens; reduce heat. Add cheese; stir until melted; remove from heat.

In separate saucepan, dissolve bouillon cubes in boiling water. Add broccoli to bouillon; cook until tender; drain. Add broccoli to cheese mixture; heat to serving temperature. Serve with some crusty bread and fresh fruit for a nice lunch!
