Introduction

Jazzed up eggs to help kickstart your morning. Extra yummy flavors infused in the eggs makes this a great after-workout meal. Jazzed up eggs to help kickstart your morning. Extra yummy flavors infused in the eggs makes this a great after-workout meal.
Number of Servings: 4

Ingredients

    9 large eggs
    2 c. fresh spinach
    1 medium onion, diced
    1 t. minced garlic
    1/2 t. Montreal Steak seasoning (McCormick's)
    1/2 c. plain yogurt (I used Greek yogurt)
    1/4 c. low fat cottage cheese

Directions

In large bowl, add eggs, garlic, seasoning, yogurt and cottage cheese. Whisk until well incorporated.

In large saute pan, add a light coating of non-stick cooking spray. Over medium heat add minced onions and spinach and cook until onions are translucent and spinach is wilted. Add egg mixture to top of onions and spinach, turning gently until fully cooked through.

You can also adorn your dish with salsa or jalapeno slices to liven it up for those who like it hot!

    For a smaller recipe, try this:
    4 eggs
    and go half portion on all ingredients but the cottage cheese. You can also alter it for low cholesterol and just use egg whites. Season to taste. I hope this helps! Enjoy..
