Mariela's "Calabazitas"

Introduction

This is the calabasitas recipe my mom always made. She would sprinkle it with cheese and let it melt and it's delicious! You can add cheese (mozzarella would be my recommendation or queso Oaxaca) if you like. The cheese is not calculated in the calorie count. This is the calabasitas recipe my mom always made. Number of Servings: 2

Ingredients

    2 c. Zucchini, chopped
    1/2 c. Onion, chopped
    1/2 c. Tomato, chopped
    1/2 c. Yellow Sweet Corn, (I use frozen, thawed out)
    1 clove Garlic, minced
    1/2 tbs. Olive Oil
    Salt & Pepper to taste

Directions

1. Chop and mince all the required veggies. Thaw out Yellow sweet corn.
2. Heat skillet on medium heat. Add 1/2 tbs. Olive oil.
3. Add minced garlic, cook for about 30 seconds
4. Add onions, cook for about 30 sec-1 minute.
5. Add zucchini and tomato.
6. Cook, stirring occasionally for about 5 minutes.
7. Add the sweet corn, salt and pepper to taste.
8. Cover and cook for about 7 more minutes or until the zucchini is fully cooked.

Serve!!

Makes about 4 servings, can be more or less depending on how much you eat ;) I eat alot of veggies so that is why I only get like 2 servings out of it!

** sprinkle cheese on top if you like. I accompany this with some rice and its really good!
