Creamy Spinach and Mushroom Sauce with Seafood

Introduction

This is a variation on the Creamy Spinach and Mushroom Chicken. This is a variation on the Creamy Spinach and Mushroom Chicken.
Number of Servings: 4

Ingredients

    1 Tb olive oil
    1 8 oz package fresh mushrooms, cleaned and quartered
    1 can (7.75 oz) spinach, drained
    1/4 c. fat free half and half
    1/4 c. light sour cream
    1/4 c. parmesan cheese
    4 oz. light cream cheese (neufchatel)
    8 oz shrimp
    8 oz scallops

Directions

Heat oil in medium size skillet and saute mushrooms. When mushrooms are browned and cooked through, transfer them to a medium sauce pan. Add spinach, half and half, sour cream, parmesan, and cream cheese and heat to slow simmer. Meanwhile, saute shrimp and scallops in skillet used for mushrooms until cooked through. The shrimp should be pink, and the scallops no longer transparant. Do not overcook as the seafood will get tough and chewy. When spinach sauce is well blended and heated through and the seafood is ready, combine them.
Makes 4 - 1 cup servings
Serving suggestion: serve with rice
Variation: Leave seafood out, blend the sauce in a blender, and serve as a spinach dip appetizer (chilled or hot) with tolerated crackers or bread.

Each serving contains approximatly 1/4 cup cooked spinach and 1/4 cup cooked mushrooms.
