Zucchini Cobbler

Introduction

This yummy cobbler will fool everyone as it tastes just like apples. A great low calorie dessert. This yummy cobbler will fool everyone as it tastes just like apples. A great low calorie dessert.
Number of Servings: 24

Ingredients

    8 C zucchini (peeled and seeded)
    2/3 C lemon juice
    1 tsp cinnamon
    1/2 tsp nutmeg
    1 C splenda (24 packets)
    1/4 C splenda brown sugar blend

    Crust:
    4 C wheat flour
    1 C oatmeal
    11/2 C Promise fat free margarine
    1 tsp cinnamon
    2 C splenda

Directions

Preheat oven at 375 degrees

Simmer apple sized chunks of zucchini in lemon juice until tender. Add spenda sweetners and spices. Cook 1 minute longer.

Crust: Cut together dry ingredients and margarine and add 1/2 cup of zucchini to mixture.

Press 1/2 crust in to bottom of greased 9 X 13 pan. Add zucchini mixture and put rest of crust on top and sprinkle with a little more cinnamon if desired.
Bake for 40-45 minutes

I added a little more spices to mine like clove and extra cinnamon. You can also bake the bottom crust for 10 minutes before adding zucchini for crispier crust. Top with dallop of Fat Free Cool Whip if disired.
