Cold Sesame-Chicken Noodles

Ingredients

    2 - 8 oz. pkgs. House Foods Tofu Shirataki - Spaghetti Shaped Noodle Substitute
    14 oz. lean chicken breast (cooked & cubed)
    1/4 C. Better'n Peanut Butter - Original
    6 Tbsp. unsweetened soymilk
    1-1/2 Tbsp. low-sodium soy sauce
    1-1/2 tsp. sesame seeds
    1/2 tsp. minced garlic
    3 no-calorie sweetner packets (like Splenda)
    Optional: salt to taste
    2 Tbsp. chopped scallions

Directions

Rinse and drain noodles well. Pat VERY dry with paper towels. Place noodles in a microwave-safe bowl, and microwave for 1 minute. Drain excess liquid from noodles, and pat them again until thoroughly dry (the more dry the better!). Cut noodles into spaghetti-length pieces. Add cubed chicken to the noodles and set aside. In a separte small dish, combine peanut butter, soymilk, soy sauce, sesame seeds, garlic and sweetner. Mix well. You can add salt, at this point, to the sauce to taste. Pour sauce over noodles. Mix thoroughly. Top with chopped scallions and mix again. Allow to chill in the fridge. MAKES 3 SERVINGS
