Chicken Noodle Casserole

Number of Servings: 4

Ingredients

    1 10 oz. canned chicken breast (or 2 4.5 oz cans)
    1 1/2 frozen peas
    1/2 c. chopped onion
    1 can reduced fat cream of mushroom soup
    1/2 - 3/4 c. milk
    2 cups cooked whole wheat pasta (short noodles like penne or rotini)
    Black pepper

    2 tbsp. bread crumbs
    1 tbsp. butter or margarine spread

Directions

Boil pasta as directed on package. Meanwhile, mix mushroom soup, milk, peas, onion, and pepper. Add cooked pasta and stir. Place mixture into a 9x9 glass casserole dish.


In a small bowl, melt butter, then mix in bread crumbs. Sprinkle over casserole, and place into 400 degree oven for 20 minutes.


Broil for an additional 1-2 minutes, watching carefully, to toast the breadcrumbs.


Serve with a side salad. Makes about 4 servings.
