Tofu Stuffed Peppers

Introduction

Ingredients

    4 large bell peppers (green or red)
    2 tbsp olive oil
    2 tbsp dried oregano
    2 tbsp dried basil
    2-3 tsp garlic, minced
    1/2 cup onion, chopped small
    1 large zucchini, chopped into small cubes
    1 block firm tofu, chopped into small cubes
    1 - 7 oz can sweet yellow corn
    1 - 12 oz can black beans
    1 cup canned crushed tomatoes

Directions

Preheat oven to 350 degrees.

Wash the peppers and place them in a baking dish. Slice off the tops, seed them, and set aside.

In a large frying pan over low-med heat, sautee the herbs, garlic and onions for 2-3 minutes. Add the zucchini and tofu and let cook for 5-7 minutes. Add the corn and cook for another 3-5 minutes. Remove from heat.

Pour the tofu mixture into a large bowl and add the beans and crushed tomatoes. Mix well. With a large spoon, stuff the peppers and replace the tops.* Put peppers in oven and let bake for 20 minutes. Cover the peppers with tin foil and let bake for another 20 minutes. Serve hot.

*Leftover mixture can be heated in microwave and eaten on it's own later, or added to an omelet!
