Summer Squash Gratin

Introduction

Number of Servings: 6

Ingredients

    2 medium onions sliced 1/4 in thick (about 4 cups sliced)
    2 tbs olive oil
    2, 6-8 inch zuchini, cut into 1/4 in slices
    2, 6-8 inch yellow summer squash, cut into 1/4 in slices
    1/2 tsp black pepper
    1 tsp salt
    2 tbs fresh thyme (1 tbs dry)
    1/2 cup grated Parmesan Cheese

Directions

Saute onions in a large frying pan with 1 tbs olive oil over medium heat until limp and beginning to brown

While onions are cooking slice tomoatoes and place in single layer in bottom of sprayed, shallow 9x13 in baking pan.

Place zucchini in single layer over tomatoes. Place squash in sinlge layer over zucchini and sprinkle with thyme. Layer cooked onions over squash.

Drizzle with remaining olive oil; add pepper and salt, top with cheese and bake at 350 degrees for 1 hour. Or until cheese is melted and veggies are tender.
