Weight Watcher Italian Mozzarella Eggplant

Number of Servings: 4

Ingredients

    1 small eggplant, peeled and sliced in 1/4 inch slices
    1/2 cup chopped onion
    1/2 cup green pepper
    1 tbsp. Enova oil (or whatever you perfer)
    1/2 cup egg subst. or 2 egg whites
    8 oz. (2 cups) fat free mozzarella cheese grated
    14.5 oz can stewed tomatoes
    1 tbsp. oregano or to your own taste
    3 tsp. garlic powder or fresh garlic clove - garlic to your own taste
    dash salt and pepper
    (you could subst. 1 jar speghetti sauce for the stewed tomatoes and spices to eliminate a step). If you do, try for a low calorie low sodium jar of sauce this will change nutritional info but not by too much!

Directions

Add 1 tbsp. oil in casserole dish; add egg subt.
Layer pan with eggplant, sauce and cheese.
I mix pepper,onion,stewed tomatoes,garlic,oregano,salt,pepper for sauce
Proceed in layers of all 3 ingrediants, ending with cheese, until all ingrediants are used.
Bake at 325 for 1 hour. Serves 4
