Ingredients

    1 32 oz. jar picante sauce
    2 16 oz cans black-eyed peas drained
    1 16 oz can white hominy drained
    1 cup diced green pepper
    1 cup diced white onion
    1 cup diced fresh tomato (or use 1 can petite diced tomatoes - do not drain
    1/2 cup finely chopped fresh cilantro (or 1 tsp dried)
    1/4 cup seeded and chopped jalapeno pepper (optional)
    1 cup chopped green onion (include green tops)
    1 tbsp. sugar (I used Splenda)
    1 tbsp. salt
    1 tbsp. black pepper
    1 tbsp. ground cumin

Directions


Mix all ingredients together well. Cover and let the flavors "marry" overnight.
