Ingredients

1 ¼ cups all-purpose flour
1 ¼ cups whole-wheat flour
1 ¼ cups cornmeal
1 ¼ cups old-fashioned rolled oats
½ cup toasted wheat germ
½ cup packed light brown sugar
1 tablespoon baking powder
¾ cup natural peanut butter
1 cup plus 1 tablespoon water
¼ cup dried parsley
1 large egg (separated)
Directions
Pulse flours, cornmeal, oats, wheat germ, brown sugar, and baking powder in food processor until combined. Add peanut butter and pulse until mixture resembles coarse meal with pea-sized lumps. Add 1 cup water, egg yolk and parsley and pulse until a coarse, dense dough forms.
Preheat oven to 350o F. Grease 2 large baking sheets. Scoop dough out using a Tablespoon. Flatten slightly with a cookie press or bottom of greased glass.
Whisk egg white and 1 tablespoon water. Brush biscuits with egg wash and bake until tops are golden brown, about 35 minutes.
Keep in an airtight container at room temperature for 1 month.
