Mariela's Chicken & Veggie Stir Fry

Introduction

I love doing this dish. Its a great way to add lots of veggies into your meal. I like to accompany it with rice. I love doing this dish. Its a great way to add lots of veggies into your meal. I like to accompany it with rice.
Number of Servings: 2

Ingredients

    1-8oz chicken breast, no skin cut in stirps
    1 Garlic clove, minced
    1 Green bell pepper, chopped
    1 Red bell pepper, chopped
    3/4 c. Onion, chopped
    1 c. Broccoli, chopped (florets)
    1/2 tbs Olive Oil
    1 tbs Soy sauce

    Salt & Pepper to taste

Directions

Heat olive oil in a skillet.
Add garlic and cook for a bout 30 seconds.
Add chicken breast strips add salt and pepper to taste. Cook for about 3 minutes, or until mostly done.
Add onion and cook for about 1 minute.
Add peppers, broccoli and Soy sauce.
Cover and cook for about 5 minutes or until veggies reach desired tenderness.

Serve with rice.

*This makes 2 servings, but you can probably serve 3 or 4.

*I serve this with rice on the side
