Braised Cranberry Beef Barbecue

Ingredients

    1-1.5 cups beef broth
    1 onion, chopped
    3 garlic cloves, chopped
    1 (4lb) boneless chuck roast
    1 cup hickory barbecue sauce (Bull's Eye)
    1 cup whole-berry cranberry sauce
    salt
    pepper

Directions

Combine broth, onion, garlic roast salt and pepper in a Dutch oven. Bring to a boil. Cover, reduce heat and simmer for 3 hours or until very tender, turning the beef occasionally. Remove beef from pan. Reserve 2 cups of the cooking liquid and discard the remaining cooking liquid. Shred the beef with 2 forks. Return the beef to the pan. Add the reserved cooking liquid, barbecue sauce, and cranberry sauce stir well. Cover over medium-low heat for 10 minutes. Serve on buns.

Or I prefer to cook my roast in the crock pot. Combine the broth, onion, garlic roast, salt and pepper in a crock pot. Cook on low for 8-10 hours. When the beef is tender follow the rest of the recipe as above.
