My family loves this recipe. Chicken can be substituted for the shrimp. This recipe is simple to make. I use fat free chicken broth to greatly reduce the calories. My family loves this recipe. Ingredients

2 Tbsp. olive oil
2 Medium Onions, chopped
3 Large Cloves Garlic, minced
4 Celery Ribs, chopped
2 Medium Green Bell Peppers, chopped
6 Tbsp. Tomato Paste
1/2 tsp. Dried Red Pepper Flakes (or more)
1/2 tsp. Oregano
1/2 tsp. Thyme
6 Cups Chicken Broth (Fat Free will reduce
calories)
1 1/2 Lbs. Shrimp, peeled & deveined
4 Cups Cooked Rice (Brown Rice will increase
nutritional value)
Directions
Heat oil in large pot. Add vegetables & garlic; saute until veggies soften, about 5 minutes. Add next 4 ingredients; saute until fragrant, about 1 minute. Add chicken broth; bring to boil and cook over medium high heat until thickened, about 30 minutes. Add shrimp; simmer until shrimp are opaque throughout, about 4 minutes.
Serve over rice.

This was fabulous! As a South Louisiana girl, I was wondering how I would cook traditional La dishes without my (delicious, but nothing close to healthy) roux. This is my answer! The only change I made is using vegetable broth instead of the chicken broth. Thanks so much for this recipe - 11/15/08
