Cinna-Raisin Rice Pudding



Introduction

Low-fat, sugar-free. Easy. Very creamy, yummy! A favorite of our family, we have this often. Serve warm or cold. Low-fat, sugar-free. Easy. Very creamy, yummy! A favorite of our family, we have this often. Serve warm or cold.
Number of Servings: 8

Ingredients

    2 cups water
    1/4 tsp salt
    1 cup long grain rice
    3 cups 1 % milk
    1/2 cup SPLENDA, granular
    1/8 tsp ground cinnamon
    1/2 cup raisins
    1 1/2 tsp vanilla extract

Directions

Bring water to a boil in a heavy medium-sized saucepan. Stir in salt and rice. Cover, reduce to low heat and simmer until water is absorbed (about 12 minutes).

Add milk, SPLENDA granular, cinnamon and raisins. Cook, uncovered, over low heat, stirring occasionally, until most of the milk is absorbed (about 15 minutes).

Remove from heat and stir in vanilla. Serve warm

*Excellent warm but still great when cooled. Can be reheated in microwave.

  • This is incredible! I made it with brown rice instead, and had to increase the intial cooking time to 30 minutes, but once I added the milk it was the same. It's creamy and delicious, and I will probably make this a lot, since it's really filling and satisfying. Thank you! - 1/19/09
