Ingredients

1.5 c. dry lentils
3 tomatoes, diced
3/4 onion
5 carrots, chopped
5 stalks celery, chopped
2 tbs. olive oil
2 c. vegetable broth
6 c. water
Salt, pepper, oregano, and cumin to taste
Directions
Soften the onion, carrots, and celery with the olive oil in the bottom of a big soup pot. Add the lentils, carrots, celery, tomatoes, broth and water. Bring to a boil and simmer for 45 minutes. When soup is nearly done, add the spices to taste. Makes about six 1 1/2 c. servings.
