IntroductionFilling, but a little bland. Play with some seasons and let me know what's nummy! Filling, but a little bland. Play with some seasons and let me know what's nummy!
Brown Rice (I used instant)
Chop the chicken up and pan cook it - I used a nonstick spray to make sure it didn't stick.
Dice your onion and red pepper. Chop the clove of garlic. Heat just enough to soften the pepper and onion just a little bit.
Mix the cooked chicken, rice, peppers, onion and garlic together and put in a baking pan. (I used a 4x4 glass pan). Pour egg white over and bake at 350 degrees for approximately 30 minutes.
When I realized how bland it was, I sprinkled a little cumin across the top. Now that was yum! A little sweet teriyaki sauce would go nicely too. Feel free to play with the spices. Hefty servings for 4 people.
