Chicken 'n Rice Something

Introduction

Ingredients

    Egg whites
    Brown Rice (I used instant)
    Red Pepper
    Cooking onion
    Garlic
    Chicken

Directions

Make rice according to the package.

Chop the chicken up and pan cook it - I used a nonstick spray to make sure it didn't stick.

Dice your onion and red pepper. Chop the clove of garlic. Heat just enough to soften the pepper and onion just a little bit.

Mix the cooked chicken, rice, peppers, onion and garlic together and put in a baking pan. (I used a 4x4 glass pan). Pour egg white over and bake at 350 degrees for approximately 30 minutes.

When I realized how bland it was, I sprinkled a little cumin across the top. Now that was yum! A little sweet teriyaki sauce would go nicely too. Feel free to play with the spices. Hefty servings for 4 people.
