Crock Pot Cabbage Soup

Ingredients

1 can of Chicken Broth
1/2 head of Cabbage - chopped
3 large carrots - chopped
8 stalks of celery
1 onion chopped
1 cup of green peppers chopped (approx 2 large)
1 can chopped tomatoes
1 can of sliced mushrooms
1 pkg of lipton onion soup mix
12 oz can of v-8 juice

Directions
Chop all veggies into bite size pieces. Drain and rinse canned mushrooms. Add all ingredients in a large crock pot - cook on high for two hours and then on low for 3 hours. Very filling. Makes 10 servings of 1 cups. very low calorie.

Not bad, great way to get in a lot of veggies. I had to add some garlic powder and some fresh thyme to bump the flavor up a bit. I also used fresh mushrooms as I'm not fond of the canned type. One caveat, I did make this stovetop and not slow-cooked, so it may have contributed to lack of flavor. - 3/15/09

good basic recipe for beginners. u can play with it by adding/deleting what u like/dont like. try adding some wine,
half & half (milk), balsamic vinegar, to yer broths for variety. also, its good to tinker with more or less of everyones suggested ingredients to find yer favorite batch.

made this today and eating it right now as a nice snack....great on a cold, rainy day. I left out the green peppers and celery as I didn't have any but doubled up on the cabbage as I had 2 heads sitting around too long in the fridge. Also threw in a handful of TVP for no-fat protein and satiety. - 1/20/11

Very good recipe, I used a can of diced tomatos with chilies instead of the can in this recipe, and omitted the mushrooms since my hubby wont eat them. The chili's gave this soup the perfect little kick! I also added 3 cups of water for more soup and got 14 1c servings of very filling soup - 6/24/10
