Easy Lo Mein

Ingredients

    3 tbsp vegetable oil
    2 c snow peas, cut in half on diagonal
    5 scallions, diced on diagonal
    1.5 c fresh bean sprouts
    1/2 lb fresh mushrooms, coarsely chopped
    1 red bell pepper, seeded and cut into match stick size pieces
    2 inches freshly grated ginger
    5 garlic cloves, minced
    1 lb. Ronzoni Smart Taste thin spaghetti, cooked al dente
    2/3 c. reduced sodium soy sauce
    1 tsp red pepper flakes, optional

Directions

Cook spaghetti noodles while prepping vegetables.
Heat a large skillet or wok over high heat. When pan is very hot, add oil (it might smoke a bit). Immediately add all vegetables: mushrooms, scallions, snow peas, pepper, and bean sprouts. Stir fry for 2 minutes. Then add ginger and garlic. Add the optional pepper flakes at this time. Stir fry 4-5 minutes, until vegetables are crisp-tender and most of the vegetable liquid has cooked out.
Add cooked noodles, and toss to combine. Add soy sauce and toss to coat noodles evenly with sauce.

Makes 7 1/2 c. servings.
