Corn Meal Squash Casserole

Introduction

Ingredients

    1 Tbsp. olive oil
    5 c. squash (pat-a-pan or zucchini), chopped
    1 large onion, chopped finely
    4 cloves garlic, minced or pressed
    2 eggs
    1/2 c. corn meal
    1/2 envelope Knorr Cream of Spinach Recipe Mix
    3/4 c. milk
    2 Tbsp. Light Sour Cream
    1 cup frozen peas
    3/4 c. cheddar cheese, grated
    1/2 c. bread crumbs
    3 Tbsp. parmesan cheese

Directions

In large bowl, combine squash, onion, garlic, peas, cheddar cheese, and corn meal. Mix together thoroughly. In a saucepan, combine milk sour cream and recipe mix and simmer until it begins to thicken. Pour into squash mixture and mix until it's well incorporated. Lightly grease a 9x13 pan with the olive oil. Squish the whole mixture into the pan. Sprinkle bread crumbs and parmesan over top. Cover with foil. Bake at 350˚ for 30 minutes. Uncover and bake for 20-30 more. Makes 9 1-cup servings.
