Ratatouille

Ingredients

    1 large eggplant
    1 med to large zucchini
    1 med onion
    3 cloves garlic
    1 cup peppers cut into strips
    1 T olive oil
    2t salt
    1 large can crushed tomatoes
    1/2 c red wine
    1T each dried basil and oregano or 2T Italian seasoning

Directions

makes 6 one cup servings.

Preheat oven to 400

cube eggplant, slice zuchini, roughly chop onion, finely chop garlic. Place on cookie sheet and pour olive oil over and sprinkle with the salt. Roast in oven for 30 minutes.

Combine tomatoes, wine and spices in crockpot or soup pot. When vegetables are done add them to the crock pot. Cook on low for 4-6 hours or over a low flame for several hours.
