Techno-colored Baked Beans

Introduction

These beans are so nutritious; they are chock full of fiber, and very high in potassium, complex carbs, protein, calcium, copper, folate, iron, magnesium, manganese, phosphorus, riboflavin, selenium, thiamin, and zinc. They are delicious for a barbeque or a cookout, and so filling. Ingredients

    1 package 15 bean soup
    12 slices bacon, cut into 1/2 inch pieces
    8 cups water
    1 1/3 cups chopped onion
    1 1/4 cups ketchup
    1/2 cup maple syrup
    1/4 cup cider vinegar
    2 tablespoons dry mustard
    3 tablespoons brown sugar or molasses
    2 bay leaves
    1 tablespoon chopped garlic
    1 teaspoon salt
    1 teaspoon pepper

Directions

In a large ovenproof dutch oven, cover the beans with enough water to cover by 3 inches. Let stand overnight. Drain.

Preheat oven to 350 degrees F. Drain the soaking water and set beans aside. Cook bacon 8 minutes, or until crisp. Drain fat. Add beans, water, onion, ketchup, syrup, vinegar, dry mustard, brown sugar/molasses, bay leaves, garlic, salt, and pepper. Bring to boil on stovetop.

Transfer pot to oven. Bake, stirring occasionally, about 4 hours until beans are tender and liquid thickens. Makes 10 one cup servings.
