I came up with this after checking out a few chicken recipes. Hubby loves simple foods with simple flavors - this is definitely it!

I came up with this after checking out a few chicken recipes. Hubby loves simple foods with simple flavors - this is definitely it!

Number of Servings: 4

Ingredients

    4 chicken cutlets, 3 oz each
    1 1/2 tbsp olive oil
    1/2 tbsp garlic powder
    1/2 tsp black pepper
    2 cups instant brown rice, cooked to package directions
    1 can Healthy Request Cream of Mushroom soup
    1 small onion, chopped
    1 1/2 cup frozen peas and carrots

Directions

Heat a large skillet over medium heat. Add 1 tbsp of olive oil. Cook onions for a few minutes, but not all the way. Remove onions. Add 1/2 tbsp of olive oil. Season the chicken cutlets with garlic powder and pepper. Add to skillet.
Meanwhile, cook brown rice according to package directions.
Once the chicken is done (or almost done), add the can of soup, onions, and the frozen peas and carrots to the pan. If it gets thick right away, add a little water. Cover the pan and let the chicken simmer until the rice is done - about 10 minutes.
Serve the chicken mixture over the rice.
