Red & Green Pasta

Introduction

This is my "go to" pasta dish when I want to eat vegetarian and to make something really fast.
Sometimes, I use exotic pasta like spinach, basil or herbs. Angel hair pasta works just fine, too
This is my "go to" pasta dish when I want to eat vegetarian and to make something really fast.
Sometimes, I use exotic pasta like spinach, basil or herbs. Angel hair pasta works just fine, too

Number of Servings: 4

Ingredients

    1 pound angel hair pasta
    1 cup fresh ripe tomatoes, cut into small pieces
    2 cups fresh spinach
    1 Tbsp olive oil
    1 large shallot, finely minced
    3 cloves garlic, finely minced

Directions

Cook pasta according to directions. It is recommended that pasta be salted with the water, but I skip this to keep my sodium down.
TIP: You save about 1 cup of pasta water to "refresh" the dish, if it dries out.

In a non-stick skillet, bring olive oil to medium-high.
Cook shallots for 1-2 minutes, without burning.
Add fresh garlic and cook until fragrant, about 30 seconds.
Add spinach and fresh tomatoes.
Drain pasta, reserving one cup of pasta water.
Add pasta to non-stick skillet and stir.
