Introduction

Ingredients

    Chicken Breast, no skin, 3 ounces
    Olive Oil, 1 tbsp
    Tomato Sauce, 1 tbsp
    Mozzarella Cheese, part skim milk, 1 oz
    Pepperoni, 4 slice (1-3/8" dia x 1/8" thick)
    half large mushroom sliced
    oregano, pinch

Directions

Brown 3oz. slice of chicken breast in olive oil. Season with salt and pepper to taste. Maybe garlic powder if you like it. Top with tomato sauce and sprinkle with oregano. Top with cheese, mushroom slices and pepperoni and bake at 425 degrees till cheese bubbles. Serves one.
