Wheat berry salad

Ingredients

2 cups cooked wheat berries (1 cup uncooked)
1 can whole beets, cut in chunks
1 cucumber, cut in chunks
1 apple, unpeeled and cut in chunks
1 orange, peeled and just the segements (reserve the juice for the dressing)
Dressing
1tbs walnut oil
juice from the orange above (reserved from creating segments)
2 tsp dijon mustard
1 tsp herbs du provence or other herbs you like
Directions
Prepare wheat berries, by taking 1 cup of wheat berries and placing them in a pot of simmering water, with a bit of salt, for about 1 1/2 hours til the berries are tender and chewy.
(they can also be done in a crock pot on low for abot 8 hours if you're making a larger batch - wheat berries are a great rice replacement -they're nutty and chewy and wonderfully satisfying.)
When the berries are done...
Peel the orange with a knife removing the rind, and individually removing the segments, so you just have the orange an dno membrane.
Squeeze the orange membrane to extract the juice into a bowl.
Add in the mustard, and herbs du provence.
Add the walnut oil and whisk
Chop up and apple and put i bowl w/ dressing
Chop up beets, and put in the same bowl
Chop up cucumber and put i the same bowl
Add orange supremes to bowl
Add wheat berries and toss gently
Refrigerate for about 30 minutes and serve in lettuce cups or asa side dish.
