Easy to make and freeze for cold days in the office. I usually start my slow cooker on low after lunch and by the time I'm hungry for dinner, it's ready! Easy to make and freeze for cold days in the office. I usually start my slow cooker on low after lunch and by the time I'm hungry for dinner, it's ready!
Number of Servings: 8

Ingredients

    Turkey thigh- raw, sliced about 1 thigh
    (I get mine at the farmer's market for 2.69 a pound!)
    1 normal size can stewed tomatoes
    1 bag frozen corn
    1 can creamed corn
    1 can bbq baked beans (gives it the sweet smoked flavor)
    1-2 Jalapeno peppers, seeds removed and chopped.

Directions

Chop the raw turkey, add to slow cooker, add other ingredients. Set it and forget itI Makes about 8 servings and is very very filling. I serve mine with Albanian cheese and scallion cornbread. Cook for 3-5 hours on high and 4-8 on low. It just depends on the slow cooker but over cooking is ok and won't really hurt it.
