Roasted Corn with Sweet Red Peppers

Made this for the fall equinox but would also suit thanksgiving Made this for the fall equinox but would also suit thanksgiving
Number of Servings: 4

Ingredients

    4 ears of fresh corn
    melted butter
    1/3 cup diced sweet red bell pepper
    Black pepper to taste

Directions

Remove husks and silk from ears of corn. Place each ear on a piece of heavy duty foil then brush with melted butter. Sprinkle about 2-3 teaspoons of diced red pepper over each ear. Sprinkle lightly with ground black pepper. Wrap foil around corn and twist each end. Bake at 450 degrees for 25 minutes.
