Pineapple Bulgar Salad

Introduction

I love adding this salad to my lunch. I love adding this salad to my lunch.
Number of Servings: 1

Ingredients

    3/4 cup cooked bulgar wheat (cooled)
    1/3 avocado, diced
    1/3 cup fresh pineapple, diced
    1/4 cup sweet peppers, diced
    2 tbsp celery, minced
    1 tbsp lemon juice
    1 tsp oil (I prefer grapeseed oil for this recipe)

Directions

Cook and chill bulgar wheat Mix all ingredients and serve. The lemon juice and pineapple will keep the avocado from turning brown.

Makes 1 serving. Half the recipe to serve as a side
