Raw Apple Breakfast Pie

    3 medium organic apples, grated
    1⁄2 c raisins
    1⁄4 c shredded coconut
    1⁄4 c walnuts, chopped
    1 TBSP cinnamon
    1 TBSP vanilla extract (optional)
    1⁄2 organic lemon, juiced
    1-2 tbsp. agave syrup (optional)


Combine all ingredients in large bowl, mix well. Either let the ingredients marinate overnight, or let the ingredients sit in the bowl for at least 30 minutes before serving. Right before serving, top it with raw granola cereal, dehydrated buckwheat or sprouted quinoa.
