Chicken Hash w/ Potatoes & Peppers

Introduction

Ingredients

    1/2 lb red potatoes
    2 TB olive oil
    1/2 c. chopped onions
    1/2 c. chopped green bell pepper
    1/2 c. chopped red or orange bell pepper
    1 c. chopped chicken, cooked
    1 tsp garlic, minced
    1 tsp paprika
    1/2 tsp thyme
    1/2 tsp salt
    1/2 tsp pepper
    1/4 tsp Cavendar's Greek Seasoning
    1/4 tsp Red Pepper Flakes (opt.)

Directions

If chicken isn't already cooked, cook in boiling water about 15 minutes, or until done. Chop.

Cook potatoes in boiling water til tender, about 25 minutes. Drain, cool. Cut into 1/2 inch dice pieces.

In large skillet over med-high heat, heat oil. Add onion. Cook 2-3 min, then add garlic and bell peppers. Saute about 4 minutes.

Stir in potatoes, chicken, paprika, thyme, salt and pepper, Greek sng, and pepper flakes, if using. With flat side of spoon, press hash into even layer over bottom of skillet. Cook, without stirring, until bottom is well browned, about 5 minutes.

Serves 4.
