Corn-Zucchini-Carrot-Jalepeno Muffins

Introduction

OK, these may sound crazy. But for a corn muffin, they're pretty good. They definately have a "healthy" taste to them. I liked them more than my family, but then, they aren't eating to lose weight either! OK, these may sound crazy. But for a corn muffin, they're pretty good. They definately have a "healthy" taste to them. I liked them more than my family, but then, they aren't eating to lose weight either!
Number of Servings: 15

Ingredients

    1 c yogurt, plain
    1 c cornmeal
    1/2 c flour
    1/2 c whole wheat flour
    3 TB sugar
    1 tsp salt
    1 TB baking powder
    1 tsp baking soda
    1 c. corn kernels
    3/4 c. (or 1/2 c) grated zucchini
    1/3 c. grated carrot
    1/3 c. grated cheese
    2 TB finely chopped onion
    1 TB minced garlic
    2.5 TB finely chopped Jalepeno peppers
    3/4 to 1 c. water

Directions

Spray pam into muffin tins. Preheat oven to 375*.

Blend dry ingredients. Add yogurt, corn, zucchini, carrot, onion, garlic, jalepenos and cheese. Mix. Add just enough water to make a nice batter.

Bake 15-20 minutes or until lightly brown on top.
