Introduction

Ok, I'll admit, this dish looks kinda gross when cooked, but it is DELICIOUS!!!! :) I recently fixed it for a bunch of my hubby's (non-vegetable, picky) male friends, and they all loved it. One of them even wanted the recipe for his wife! Ok, I'll admit, this dish looks kinda gross when cooked, but it is DELICIOUS!!!! :) I recently fixed it for a bunch of my hubby's (non-vegetable, picky) male friends, and they all loved it. One of them even wanted the recipe for his wife!
Number of Servings: 4

Ingredients

    1-2 zucchini, diced into bite size pieces
    1 squash, diced (dito)
    4 pieces bacon (the real stuff), cooked, chopped
    1/4 c. reduced fat mozzarella cheese, shredded
    1/4 c. reduced fat cheddar cheese, shredded
    1/2 c. chopped onion
    1.5 tsp garlic
    1 TB evoo
    1/4 c. diced carrots

Directions

Cook bacon. Chop and set aside. ( You can use some of the oil from the bacon for flavor, or evoo.) Put oil in skillet, add onion, garlic and carrot. Cook til onion is clear. Add zucchini and squash. Cook about 10 min. Add bacon and cheese. Cook another minute or two til cheese is melted.

Serves 4.

  • Besides the zucchini, what is the other kind of "squash" that you used? The recipe does not say and there are many kinds of squash available. :-) - 11/15/08

    Just plain 'ol yellow, summer squash. I prefer zucchini to squash, but if you like the squash better, I'm sure it'd be good with more squash than zucchini. :) Hope you like it .....we love it! :)
