Pork King a la Squash Chicken

A healthy non dairy twist on Chicken a la king A healthy non dairy twist on Chicken a la king
Number of Servings: 4

Ingredients

    3 cups pork cubed
    1 cup chopped mushrooms
    1/2 cup chopped onion
    1 red pepper diced
    1 tbsp canola oil
    4 garlic cloves
    1/4 cup diced celery (or broccoli slaw)
    1.5 cups diced butternut squash
    1/2 cup rice milk

Directions

heat oil in large skillet. add mushrooms, onion, peppers, garlic, celery and saute until soft. Put squash, sauteed veggies, rice milk into food processor and puree. In the meantime add pork to hot skillet and cook through. Add pureed veggies to pan and mix well. Salt and Pepper to taste. Serve over rice or pasta.
