IntroductionI came up with this recipe when I was in a pinch, I had some ground turkey and wanted to make homemade sloppy joes. I didn't like any of the recipes I found online, so I took the parts I liked from 3 or 4 different ones. My family LOVES them. I came up with this recipe when I was in a pinch, I had some ground turkey and wanted to make homemade sloppy joes. 4 tbsp. vegetable oil, divided
2 med. onions, peeled and diced
1 red bell peppers, seeded and diced
1 green bell peppers, seeded and diced
3 cloves garlic, peeled and minced
1 rib celery, diced
1 carrot, peeled and grated
1 med. zucchini, grated
1/4 tsp. ground cumin
1/4 tsp. dried thyme
1/4 tsp chili powder to taste
1 ΒΌ lb. raw ground turkey
1 can (8 oz.) tomato sauce
4 Tbs BBQ sauce (~ 4oz)
1 can (14 1/2 oz.) chicken broth
2 tbsp. Worcestershire sauce
2 or 3 drops Tabasco sauce
1 bay leaf
Salt, to taste
Heat remaining 2 tablespoons oil in the same skillet. Stir in ground turkey. Cook, stirring and breaking up turkey with a wooden spoon, for 3 to 4 minutes or until lightly golden. Add reserved vegetable mixture, tomato sauce, BBQ sauce, chicken broth, Worcestershire sauce, Tabasco and bay leaf.
Reduce heat and simmer, partly covered, stirring occasionally about 15 minutes or until sauce thickens slightly. Taste and adjust seasoning, adding salt and cayenne, if necessary. Remove and discard bay leaf.
Serve on your favorite hamburger bun or roll.
Note: I chopped the onions & celery together in food processor and then added the bell peppers and processed them until they were chopped fine, then added the garlic, I cooked all these together before adding the carrots and zucchini and spices.
