This is a fast and easy meal that is great on a cold day. This is a fast and easy meal that is great on a cold day.Number of Servings: 6
Ingredients

28oz can crushed tomatoes
16oz can chick peas (well rinsed)
3 onions, chopped
1 zucchini, yellow or green, chopped
1 cup bell peppers, red, yellow, orange, sliced
3 boneless, skinless chicken breasts, cubed
6 cloves garlic, crushed
1 tsp salt
3 cups water
1 tbls olive oil
6 small red potatoes
Directions
1. In a large pot, add olive oil and turn up to high.
2. Clean and chop potatoes into small bite-size pieces, and add to pot, stirring occassionaly until slightly brown.
3. Add chopped onion, chick peas and garlic to pot. Keep stirring.
4. Once onion starts to get soft, add cubes of chicken, bell peppers and salt, and cook for 5 minutes, stirring occassionaly.
5. Add can of tomatoes, zucchini and water. Boil for 20 minutes or until potatoes are soft and chicken is cooked.
Serve with crusty bread or crackers.
