Ingredients

    1 small GREEN apple, sliced thin
    1 TBS sugar
    1/2 tsp cinnamon
    2 teaspoons butter or margarine
    2 eggs, separated
    1/4 cup non fat milk
    1 TBS flour
    1/4 teaspoon EACH nutmeg and baking powder

Directions

Preheat oven to 400. Peel, core and cut apple into thin slices

In bowl, mix half the sugar with cinnamon and toss with apple slices.

In 9-inch non-stick oven proof skillet melt butter. Arrange apple slices over bottom of skillet

Cook over low heat about 5 minutes

In a medium bowl, beat egg whites until soft peaks form. Add remaining sugar and continue to beat until firm and glossy.

In small bowl, beat together egg yolks, milk, flour, nutmeg and baking powder.
Fold yolk mixture onto egg whites.
Pour batter over apples and spread evenly.

Bake 12 minutes. Invert onto heated serving plate and cut in wedges.
