1/3 C Soy Sauce (lite) 3 Tbsp Sherry 1 tsp Cornstarch 2 boneless, skinless chicken breasts, cubed 2 C. Broccoli 2 Tbsp. Brown Sugar 3 Cloves Garlic 3 Tbsp. Olive Oil 1/4 C. Water
Mix soy sauce, brown sugar, sherry, cornstarch, water in a bowl. Cut chicken breast into cubes, and marinate in bowl with mixture for 10 minutes (or longer if you prefer). Drain chicken, reserving marinade. Heat oil in skillet, add chicken. Stir fry until brown. Remove chicken from skillet. Put broccoli in skillet, along with 1/4 c. water. Steam for 3 minutes or until tender crisp. Return chicken to skillet, adding marinade. Heat through, stirring constantly. Serve over rice.
