Salmon served on a bed of brown rice with a creamy spinach, mushroom, and onion topping. Since I only cook for 1, I use precooked rice and prechopped onions to cut out prep time.
1 individual salmon fillet-- 4 ounces
1 tablespoon diced raw onion
1 cup frozen spinach
1/4 cup sliced canned mushrooms
1/2 cup water
1 tablespoon cream of mushroom soup
1 teaspoon garlic
1 dash pepper
1 cup cooked brown rice
*While onions are cooking, mix 1 tablespoon cream of mushroom soup (I used Campbell's regular condensed, but you can get healthier version for your dietary needs) with 1/2 cup of water. Set aside.
*Add a few sprays of nonstick cooking spray to skillet, and place the 4 ounce salmon fillet in with the onions. Cook thoroughly, about 4 minutes, flipping each minute to prevent burning.
*Add 1 cup frozen spinach, 1/4 cup sliced mushrooms, 1 teaspoon garlic, a dash of ground pepper, and soup mixture to skillet. Continue cooking on high.
*While skillet mixture is cooking, spread 1 cup precooked rice on a dinner plate. Microwave on high for 60 seconds.
*Cook skillet mixture till water has evaporated, leaving only the creamy vegetable mixture and salmon. Place salmon on top of warmed rice, then spread spinach mixture over entire dish.
