Introduction

Spelt is a delicious, healthy alternative to wheat. Using spelt makes for a tender bread with wonderful flavor. Some people who are sensitive to wheat can tolerate spelt. Number of Servings: 24

Ingredients

    1 1/4 cup Granulated Fructose
    3 eggs slightly beaten
    1/2 cup Canola Oil
    2 cups Grated, unpeeled Zucchini or Yellow Squash
    3 cups Whole Grain Spelt Flour
    1 tsp Sea Salt
    1 tsp Baking Powder
    1 tsp Baking Soda
    2 tsp cinnamon
    1/2 tsp nutmeg
    1 tsp vanilla extract

Directions

Makes 24 servings.

Preheat oven to 350 degrees.

Mix fructose, sugar,oil and zucchini together. Add the remaining ingredients and mix until dry ingredients are incorporated.

Pour into 2 greased bread pans and bake for 60 minutes. Let the bread rest 20 minutes in the pans before removing.

The bread freezes well- if you don't eat it all!
